Happy Gillis

Sometimes, you just wake up with a craving for a good breakfast, and that was very much the case on a random Sunday morning for my favorite little sandwich at Happy Gillis.

Before I knew it, I was jumping on the streetcar to make my way & dreams come true in Columbus Park. I had completely forgotten that a small remodel had taken place in May, so when I walked in I was greeted with a new, beautiful and different space than I had previously known.

Once I ordered my sandwich and cold brew, I found the perfect spot under a window lined with plants, and was so excited to take in all of the changes (including the handmade wooden table I was sitting at). One of the many things I love about Happy Gillis is the use of local ingredients in their dishes, and changes to the menu due to the different seasons. So to see that the ‘iconic’ wall that used to hold different plates is now lined with photographs of farms or local farmers that they partner with, added a very special layer + connection to their new look. Josh & Abbey-Jo’s combination of love for good quality food & beer, has given this neighborhood a cafe that has been a KC favorite for over 10 years now.
