Chef Brett DeHart curates Pangaea, a Five-Course Dinner Experience for Strang Hall’s Chef’s Dinner Series

The chef’s dinner series at Strang Hall is back on! After coming to a halt earlier this year due to a surge in Covid cases, the dinner series is kicking back off April 25th with Brett DeHart, chef of Fénix and Tora Zushi. DeHart will take guests on a trip around the world with his theme, Pangaea, as each dish is influenced from a different part of the world. His wheelhouse of Latin and pan-Asian cooking will be represented but other cultural influences will be present as well. The chef is excited to serve folks something different from his usual forte.
DeHart’s extensive and dynamic culinary background shine through the five-course menu; the fourth course being one of particular excitement for the chef. The plate represents America in an elevated barbeque dish that includes smoked wagyu, a corn coulis, and raspberry barbeque sauce. Dessert, inspired by the Persian dish, sholeh zard, is a rice pudding infused with rosewater, saffron and topped with pistachios. Peru, Spain, and Japan are other countries making an appearance at the dinner table with delights such as chūtoro (tuna sushi), sablefish with an ajo blanco (Spanish cold soup) vinaigrette, and Andean pollo (Peruvian chicken fritters). Drink pairings are optional with libations such as wine, sake, and cocktails selected by Strang Hall’s wine enthusiast, Nora Engelken. While DeHart wants people to feel at home at Strang Hall, he also wants to “bring ingredients to the table that people aren’t so used to.” The chef believes the global essence of the dinner is reflective of the food hall as it “encompasses what Strang’s about.” Strang Hall prides itself in featuring chef-driven restaurants that serve flavors from around the globe.
The curated event takes place at Strang Hall Monday April 25th at 6pm. Strang Hall is closed on Mondays therefore the dinner will be a private event for guests. Tickets are available for purchase on the Strang Hall website.
